Roasted Moroccan Halloumi and Squash Wrap with Charred Corn Salsa

ingredients
Butternut Squash - medium diced
Major Moroccan Mari Base (1)
Tomato - deseeded and diced
Cucumber - deseeded and diced
Major Moroccan Mari Base (2)
Red Onion - finely sliced
Sweet Gem Lettuce Leaves - halved
Aubergine - sliced and griddled
method
1. Marinate the halloumi and butternut squash in the Major Moroccan Mari Base (1).
2. Pre-heat an oven to 180°C. Roast the halloumi and squash on a baking sheet for 30 minutes.
3. Make the salsa by combining the sweetcorn, tomato, cucumber, mint, orange zest and juice, olive oil and Major Moroccan Mari Base (2) in a bowl.
4. Warm the wraps, add the lettuce, aubergine, halloumi and squash, red onion and a serving of corn salsa.
5. Wrap and serve.
